I still remember my first trip to Wisconsin. Every style of cheese is made here, and the breadth and depth of cheesemaking knowledge is astounding. In Wisconsin you experience the direct connection between 19th century Swiss German immigrants and the food culture of today. I’ve put together a 5 day visit with several of my oldest friends in cheese, plus the food and beverage highlights of Madison and Milwaukee.

Each trip is unique but we will visit cheesemakers, tour farms and aging caves, visit local farmers’ markets, and explore the cultural activities for which each destination is known. My goal is to give you the behind-the-scenes experience that’s only available to cheese industry elites.
Anyone who is deeply interested in learning more about cheese. I don’t like travel that feels like a forced march (believe me, I’ve been on some seriously grueling industry trips that manage to ruin good food, drink and scenery because they are so punishing). But, I’m there for the cheese and the makers, so you will be too. That said, we build in downtime so you have time to digest between experiences. Most trips will require some walking.
